Fairburn’s Spiced Baileys Egg Nog

Ingredients

Serves 4

  • 4 eggs
  • 4tbsp caster sugar
  • 300ml full fat milk
  • 2 vanilla pod split
  • 150ml baileys liqueur
  • Freshly grated nutmeg
  • A good pinch cinnamon
  • 4 sticks cinnamon

Method:

Whisk together the eggs and caster sugar until the sugar begins to dissolve. Using a teaspoon scrape out the seeds from the vanilla pod. In a measuring jug, mix together the milk, split vanilla pod, scraped out vanilla seeds and Bailey’s liqueur. Then grate in a third of a whole nutmeg and a good pinch of ground cinnamon and whisk well together. Strain into a glass, garnish with a cinnamon stick inside the glass at an angle and grate a little more nutmeg on top of the eggnog. Serve with straws.
