Six eggsciting barbecue ideas!

The summer is heating up. Get your grill on with our tips for cooking eggs on the barbecue...
1. Invest in a cast iron skillet or grill tray and you can cook all sorts of foods - including eggs - on your barbecue, without them seeping into your hot coals. For fried eggs, add a little oil or butter and heat for 1-2 minutes. Crack the eggs and cook the first side for two minutes then flip and cook the other side for 30 seconds. Fancy a fried breakfast outdoors? Remember your eggs will be the quickest ingredients to cook, so once you've sizzled your sausages and bacon, you can fry your eggs.
2. An even easier way to cook eggs outdoors is to make round foil trays for each egg. Brush with oil and place onto the grill. Crack an egg into each tray and cook with the barbecue lid closed for 1-2 minutes until the egg whites are set.
3. Go one step further and use vegetables as edible saucepans! Large portobello mushrooms and rings of bell pepper are perfect for this. Grill the veg on both sides for a few minutes, then turn them face up and crack your egg into the middle.
4. This sizzling shakshuka is perfect for a BBQ. Sauté your veg in your skillet or roasting tray, add spices and garlic and heat gently. Pour a tin or two of chopped tomatoes on top. Make wells in the sauce and crack your eggs. Close the BBQ lid and simmer for around eight minutes or until your eggs are cooked to your liking.

6. Finally, who says you even need to crack the eggs? A fantastic alternative to hard-boiled eggs is placing a raw egg – shell and all – onto a hot grill grate! Put the lid on and leave for 12 minutes. Pop in an ice bath when cooked and peel. The result: cooked eggs with a semi-soft yolk and slightly smoky flavour.
