Celebrity chef to cook up treats at Collingham store

Customers at Lincolnshire Co-op’s Collingham Food Store in Nottinghamshire will get a cracking treat on Friday 28 June when celebrity chef Rachel Green cooks up tasty dishes for shoppers using LJ Fairburn & Son’s award-winning British Blue® Eggs.
Rachel will be at the High Street store between 11am and 4pm cooking a variety of recipes all made using the delicious pastel blue eggs, with a vibrant golden yolk, which are part of Lincolnshire Co-op’s Love Local range. Laid by free range hens, fed a bespoke natural diet containing extracts from brightly coloured flowers, on Fairburn’s farms less than 50 miles away from Collingham, British Blue® Eggs were described as a ‘perfect egg’ when they won a sought-after two star Great Taste Award.
Dishes being served to customers will include scrambled eggs with smoked salmon salsa, smoked haddock kedgeree, pancakes, Turkish baked eggs and corned beef hash. Rachel is a well-known chef, author, TV presenter and food campaigner, and she works closely with Alford-based Fairburn’s, developing mouth-watering recipes and demonstrating to customers.

Collingham Food Store is one of 11 Lincolnshire Co-op stores stocking Fairburn’s British Blue® Eggs which are laid by Fairburn’s British Blue® hens, a unique breed, developed, hatched and reared in Alford. For every pack of the eggs sold, a donation is made to the new Lincolnshire Coastal Country Park.
